These baked egg and avocado cups are perfect for any meal or snack. Featuring our organic eggs, avocado, bacon, and olive oil drenched roasted tomatoes, this recipe is an umami explosion of flavor and healthy ingredients!


1 avocado

2 Farmers Hen House eggs – whites and yolks separated

1/2 cup of diced ham or bacon sauteed until brown

2 tbsp. green onions chopped

1/4 cup sliced cherry tomatoes

2 tsp olive oil

2 tbsp. parm

Salt and pepper


Step 1

Preheat oven to 350.

Step 2

Cut avocado in half and remove pit.  Scoop out about tbsp of avocado meat from each half.

Step 3

Carefully place one egg yolk in avocado.  Add as much egg white as you can until avocado is full but not overflowing.

Step 4

Add a sprinkle of salt and pepper, 1 tsp of olive oil drizzled over top, and place in a shallow baking dish.  Bake at 350 for 20 minutes.

Step 5

Meanwhile, on a small sheet pan, mix halved cherry tomatoes, the remaining tsp of olive oil and a sprinkle of salt and pepper.  Spread evenly on pan, and bake in the oven for 10 minutes or until tomatoes are blistered and browned.

Step 6

Once eggs are set to your liking, remove from oven, and add ham, tomatoes, chopped green onions and parmesan.  Enjoy!
