It’s hard to improve on a classic, but we’re going to go out on a limb and say this egg salad sandwich recipe featuring Farmers Hen House eggs does just that!  Additions of carrots, almonds, and cranberries, just to name a few really set this classic apart.  We think you just might agree!

Ingredients

 

 

 

 

 

 

 

 

3 pieces of your favorite bacon cooked and chopped

1/3 cup thinly sliced green onions

2 tablespoons plain Greek yogurt

1 tablespoon mayo use a mayo product that’s just mayo or use another tablespoon Greek yogurt

2 teaspoons Sriracha or other hot chili sauce

1/4 teaspoon pepper

1/8 teaspoon sea salt

6 large hard-boiled Farmers Hen House eggs peeled & chopped

1 cup shredded carrots

1/4 cup slivered almonds (optional)

1/2 cup raisins or dried cranberries (optional)

Bread or lettuce wraps for serving

Olive oil if using bread

Directions

Step 1

Stir together all ingredients in a medium bowl.

Step 2

If using bread, toast and drizzle with olive oil.

Step 3

Serve egg salad on lettuce wraps or on top of toast and enjoy!
