Looking for the perfect spring picnic entree?  This Spring Egg Salad featuring our Pasture-Raised Eggs should suffice.  With fresh dill, chives, and carrots, paired with delicious hardboiled eggs, whipped mayo, dijon mustard, dill pickles, and Lola’s Fine Hot Sauce spread on sourdough toast, this Spring Egg Salad is sure to fill your palate and plate as the outdoors fills up your heart and soul!


Egg Salad Ingredients









1/4 cup mayonnaise

1/4 cup dill minced

2 tbsp chives minced

2 tbsp chopped dill pickles

1/4 cup chopped or shredded carrots

2 tbsp dijon mustard

1/2 tsp salt

8 hardboiled Farmers Hen House eggs

Lola’s Fine Hot Sauce (optional)


Step 1

Chop hardboiled eggs and put in mixing bowl.

Step 2

Add dill, chives, pickles, carrots, mayo, mustard, salt and pepper and stir to combine.  Adjust seasoning if needed.

Step 3

Toast sourdough for sandwiches.

Step 4

On each sandwich, add 1/4 cup greens, egg salad and a few dashes of Lola’s Fine Hot Sauce if using.
