Check out this healthy, easy, and delicious tomato egg bake recipe!  With feta cheese, prosciutto, chives, and sweety drop peppers, this tomato egg bake makes for a great and quick lunch + leftovers!  It’s a hot savory mess!

Ingredients

4 large beefsteak tomatoes

4 Farmer’s Hen House eggs

4 tbsps chopped green onions or chives + more for garnish

12 oz crumbled feta cheese

12 oz chopped panceta or prosciutto

12 sweety drop mini peppers (optional)

Salt and pepper

Olive oil

Directions

Step 1

Preheat oven to 400 degrees.

Step 2

Slice the tops off of tomatoes and place in baking dish.

Step 3

Scoop out insides of tomatoes and set on top of their tops in baking dish.

Step 4

Inside each tomato, add ingredients in this order:

* feta

* egg

* salt and pepper

* chives or green onions

* pancetta

* salt and pepper

* more feta

* drizzle of olive oil

Step 5

Bake in the oven for 30 minutes or until eggs are firm.

Step 6

Garnish with chopped chives or green onions and sweety drop peppers.
