Mini Egg Bites: Mediterranean Style

Don’t judge these mini egg bites by their size!  They pop with a flavor and spice that will transport you to the Mediterranean (just don’t open your eyes!)…  With ingredients of oregano, feta, olive oil, and tomatoes melded into the perfect bite featuring our rich pasture raised eggs, you’ll need to make a double batch to satiate your appetite and your company’s, if they’re invited.  These mini egg bites are perfect for any summer gathering, or making a batch and having them handy for pre-made breakfasts and snacks.


8 Farmer’s Hen House Eggs

1/3 cup of whole milk or heavy cream

1 tsp salt

1/2 tsp pepper

1/4 cup crumbled feta

1/4 cup diced tomatoes

2 tbsp. oregano

Step 1

Whisk together eggs and milk/cream.

Step 2

Add salt and pepper.

Step 3

Pour into a greased 24 count mini muffin tin. Fill each cup 2/3rds of the way full.

Step 4

Add feta and tomato to each cup.

Step 5

Sprinkle oregano on top.

Step 6

Bake at 375 degrees for 10 minutes.
