This easy and delicious toast will transport your tastebuds to the Mediterranean! With soft scrambled Farmers Hen House eggs, fresh tomatoes, savory garlic, melted feta cheese, and crusty bread, you’ll want to take your time soaking up the umami rays that this toast has to offer!
2 slices of your favorite crusty bread
2 large, ripe, firm tomatoes
2 tablespoons extra-virgin olive oil + more for garnish
1 garlic clove (chopped)
1 tablespoon dried oregano plus more for garnish
2 tbsp. fresh mint (if you chop this, it will brown, so we suggest pulling and tearing the leaves for your garnish)
4 Farmers Hen House eggs
½ cup grated feta cheese
Salt and pepper
1 tbsp. chopped kalamata olives (optional)
Lop off a dime-size piece of the base of the tomato using a sharp knife. Grate the tomato from the base along the coarse side of an upright hand grater.
In a 10-inch frying pan over medium heat, warm the olive oil and add the chopped garlic. Cook for a minute or so, careful not to burn. Add the tomatoes, a sprinkle of salt and pepper. Cook them until all their water has cooked off and all that’s left is thick pulp, about 10 minutes.
Pour in the eggs and oregano. Season with salt and pepper. Stir all together with a wooden spoon. Remove when the eggs are cooked to desired doneness, anywhere between 5 and 8 minutes.
Transfer to serving slices of toasted bread and sprinkle with grated Greek feta cheese, oregano, fresh mint and kalamata olives if using.
