Roasted Garden Tomato Egg Toast

Bring the vibrancy of the season onto your plate with this savory and sweet roasted garden tomato toast that will carry your palate to an English garden on a dewy summer morning.  Sounds nice, right?


1 pint cherry tomatoes

2 garlic cloves

2 tbsps olive oil + more for drizzling

2 slices of sourdough bread (or your preferred toasting bread)

4 fresh basil leaves

2 Farmers Hen House eggs

salt & pepper



Step 1

Pre-heat oven to 375.

Step 2

Slice cherry tomatoes and peel garlic cloves.

Step 3

Toss tomatoes and garlic in olive oil.  Spread tomatoes evenly on baking sheet and sprinkle with salt and pepper generously.

Step 4

Slow roast until tomatoes begin to char.

Step 5

Toast bread and then coat with olive oil.

Step 6

Cook to eggs sunny-side up to desired runniness.

Step 7

Rub one roasted garlic clove on each piece of toast.  Spread roasted tomatoes evenly on toast.  Top with egg and sprinkle with salt and pepper, and basil leaves.
