This quick and easy spiced blueberry muffin recipe, featuring Farmers Hen House Free-Range Eggs, will warm up the coldest Midwest kitchen, while satisfying your pastry palate!


1 and 1/2 cups all purpose flour

3/4 cup sugar + 2 tbsp for sprinkling

1/2 tsp salt

2 tsp baking powder

1 tbsp cinnamon

1 tsp cardamom

1/2 tsp all spice

1/3 cup vegetable oil

1/3 cup milk

1 Farmers Hen House egg

1 cup fresh blueberries or other fruit you have on hand


Step 1

Preheat the oven to 400 and spray a 12 cup muffin tin with non stick spray.

Step 2

Combine flour, sugar, salt baking powder, and spices.

Step 3

Add in oil, milk, and egg.

Step 4

Stir to combine.  If the mixture is too dry, you can add a bit more milk.

Step 5

Add fruit.

Step 6

Divide evenly between 12 muffin cups.

Step 7

Evenly sprinkle 2 tbsp sugar on top of muffins.

Step 8

Bake for 15-17 minutes or until cooked through in the middle.
