What’s better than baking potatoes once?  Baking them twice!  Especially when they’re filled with Farmers Hen House Organic Eggs, freshly grated cheddar cheese, bacon, chives, paprika, and did we mention bacon?  This delicious recipe comes from the amazing Morgan Berrington @forkmylifechi.

Ingredients

1 baked potato

Avocado oil spray

Paprika, to taste

2 Farmers Hen House eggs

2 tbsp shredded cheddar cheese

1 piece of bacon, cooked and chopped

Chives, for garnish

Salt and freshly ground black pepper

Directions

Step 1

Cut the potato in half lengthwise. Scoop out the centers leaving a rim of potatoes around the edge.

Step 2

Spray the potato with avocado oil spray and season with paprika, salt and freshly ground black pepper. Place in toaster oven (or 400 degree oven) and cook until golden brown and crispy.

Step 3

Next heat a small sauté pan over low heat and spray with avocado oil spray. Add the potato pieces that were scooped out and cook for 3 minutes. Season with salt and freshly ground black pepper.

Step 4

Beat the eggs in a bowl until well combined and then add it to the sauté pan. Cook the eggs gently until scrambled to your liking. Season with salt and freshly ground  black pepper.

Step 5

Time to assemble! Add the scrambled egg/potato mixture  into the potato boats. Next top with cheddar cheese, bacon and chives and serve!
