¼ cup thinly sliced cucumbers
¼ tsp sesame oil
1 cup cauliflower rice
⅓ cup cooked white rice
¼ tsp garlic salt
2 Farmers Hen House eggs
¼ cup kimchi
Green beans, cooked
Salt and freshly ground black pepper
In a small bowl, add thinly sliced cucumbers and drizzle with sesame oil. Season with salt and set aside.
In a small nonstick pan, spray with avocado oil spray and heat over medium-high heat. Add cauliflower rice and cook for 5-6 minutes or until cooked through. Add cooked rice and season with garlic salt. Remove cauliflower rice mixture and keep warm.
Spray pan with avocado oil spray and turn heat to low. Add the eggs and season with salt and freshly ground black pepper.
Cook for 4-5 minutes or until cooked to your liking.
Assemble the bowl! Top cauliflower rice mixture with kimchi, greens, cucumber salt and eggs. Enjoy!
