Step 1
Preheat oven to 375 degrees.
Step 2
Dice sweet potato. On a sheet pan drizzle 2 tbsps of olive oil on the potatoes. Season generously with salt and pepper.

Once preheated, bake for 15 minutes or until potatoes are soft.
Step 4
In 2 bowls, divide and add potatoes, greens, tomatoes, avocado, pistachios and radishes.
Step 5
Season with salt and pepper, 1/2 tsp of oregano, 1 tsp of lemon juice and 1 tbsp olive oil in each bowl.
Step 6
Heat a pan over medium heat and melt butter.
Step 7
Crack egg in pan and season with a pinch of salt and pepper.
Step 8
Fry egg sunny-side up until yolk is at desired firmness.
Step 9
Add egg to bowl, break yolk, stir, and enjoy!
