Wake up and let the sunshine in with this quick, easy, and keto-friendly breakfast bowl that exudes the old adage, “Put an egg on it.”  With fresh veggies, crunchy pistachios, and a Farmers Hen House organic egg, your day and body will be off to a great start!

Ingredients

2 Farmers Hen House eggs

1 tbsp of butter

1 cup of diced sweet potatoes

1 cups of chopped greens

1/2 cup of chopped tomatoes

1 avocado, diced

2 tbsp shelled pistachios

2 radishes, sliced

2 tsp. lemon juice

4 tbsp olive oil

1 tsp oregano

Salt and pepper

Directions

Step 1

Preheat oven to 375 degrees.

Step 2

Dice sweet potato. On a sheet pan drizzle 2 tbsps of olive oil on the potatoes. Season generously with salt and pepper.

Step 3

Once preheated, bake for 15 minutes or until potatoes are soft.

Step 4

In 2 bowls, divide and add potatoes, greens, tomatoes, avocado, pistachios and radishes.

Step 5

Season with salt and pepper, 1/2 tsp of oregano, 1 tsp of lemon juice and 1 tbsp olive oil in each bowl.

Step 6

Heat a pan over medium heat and melt butter.

Step 7

Crack egg in pan and season with a pinch of salt and pepper.

Step 8

Fry egg sunny-side up until yolk is at desired firmness.

Step 9

Add egg to bowl, break yolk, stir, and enjoy!
