Fall Frittata with Sausage and Fresh Apples

Tis the season for all things apples!  Including your breakfast frittatas! Check out this great seasonal recipe with apples from your recent pick, delicious sausage, and as always, Farmers Hen House eggs.  You and your family are going to love it!

Ingredients

1 tablespoon extra-virgin olive oil

1/2 pound Italian sausage

1 dozen large Farmers Hen House eggs, beaten

1/4 cup whole milk

1 apple (Granny Smith for non-sweet/McIntosh for sweet), peeled and cut into 1/4-inch pieces

1 cup grated sharp cheddar cheese

1/2 cup chopped dill

1 tsp nutmeg

Salt

Pepper

Directions

Step 1

Preheat the oven to 375°.

Step 2

In a 9-inch ovenproof nonstick skillet or cast-iron pan, heat the oil.

Step 3

Add the sausage and cook until browned.  Then add apple, nutmeg, salt and pepper, and cook over moderate heat, turning, until apples soften, about 5 – 7 minutes.

Step 4

Stir in the eggs, milk, cheese, and dill with salt and pepper.

Step 5

Bake until golden and set, about 30 minutes, then serve.
