While temperatures drop, you can keep the heat going with this deliciously satisfying Chilaquiles Rojos recipe from the amazing, Morgan Berrington (@forkmylifechi), featuring Farmers Hen House’s organic eggs!  This recipe is sure to be a hit for breakfast, lunch, or better yet, brunch!

Ingredients

1/4 cup salsa of your choice (smoother salsa works better for this)

3 tbsp water

1.5oz tortilla chips

1 Farmers Hen House egg

Cilantro, scallions, sour cream and avocado to garnish

Directions

Step 1

Mix together water and salsa.

Step 2

Heat a small pan over medium heat. Add tortilla chips.

Step 3

After 1 min, add the salsa mixture and coat all the chips. You want some soft pieces and some crispy pieces.

Step 4

Cook your egg to your preference (I like sunny side up for this recipe).

Step 5

Place tortilla chips on a plate, top with egg and all garnishes
