Elevate your Cobb Salad with this Whole 30 inspired recipe!  It’s a bouquet of organic eggs, avocado, sweet potatoes, butter lettuce, red cabbage, cherry tomatoes, turkey, and bacon!  If you have an Instant Pot, save some time by hard-boiling your eggs in it.


2 sweet potatoes, cubed

1 tablespoon olive oil

Kosher salt and freshly ground black pepper

1 (8-ounce) package bacon

1 large head of butter lettuce, leaves separated

1 (7-ounce) package deli sliced turkey

4 large hard-boiled Farmers Hen House eggs, peeled and halved

1 cup cherry tomatoes, halved

2 avocados, pitted, peeled and sliced

2 cups thinly sliced red cabbage

Ranch or blue cheese dressing

Optional: Everything Bagel seasoning



Step 1

Place Instant Pot grate inside inside Instant Pot and carefully add 8 Farmers Hen House eggs.

Step 2

Add 2 cups of water.

Step 3

Place settings on manual and cook for 5 minutes.

Preheat oven to 375°F.

Step 2

Toss sweet potatoes and olive oil together on a baking sheet; season lightly with salt and pepper. Roast until tender, about 20 minutes. Remove from oven.

Step 3

Cook bacon according to package instructions. Drain on a paper towel lined plate.

Step 4

Roll up turkey slices then cut in half.

Step 5

Arrange lettuce leaves on a large platter. Arrange hard-boiled eggs, cherry tomatoes, avocados, cabbage, sweet potatoes, bacon and turkey over lettuce.

Step 6

Serve with dressing on the side.
